I'm spoiled by some of the software I use, where the programmers
actually put some thought into the design.

While your suggestion does sound complicated, it is the way it should
work ... and that's the ideal the programmer should shoot for (IMO):
when a country code is entered, the address fields should change to
reflect the country selected.

As for discouragement, there's one thing any programmer will tell you
about GUIs: "Easy is hard."

Sure, program 'X' is the easiest thing you've ever used ... but
the programmer(s) had to work pretty hard to get it that way -- hence,
"Easy is hard."
