Since you only want to backup your internal store you might be o.k.
just using serial (providing you have a dongle (the little adapter that
gives you serial out)

Otherwise you need to turn on AppleTalk on you Mac (found in the
'Chooser' in you Apple Menu, top left on your screen) check in the
ApleTalk Control Panel if it's set for Ethernet and fire up NCU and
check in it's preferences (under the Edit menu) that it's listening on
Appletalk.

You do need the Appletalk ADSP tool in your extensions folder, but
normally NCU should have put it there with it's installation, might be
wise to check though....

Apart from that you need Newton Ethernet Enabler on your Newt with the
drivers of your Ethernet card.

You're still there? ;-)

The last one os easy to check, just install the card and see if it pops
up a slip naming your card and with a box you can check for Appletalk.

Those are OS X only, could run on your hardware but would be veryyyy
slow...
