You might try NCU:Edit:Synchronization Settings:Names:Advanced
Options:Field Mapping...

I see that I have Custom 1 (Claris) mapping to Email Address 1
(Newton). At the moment I can't remember how I ended up with that
mapping, but it works. Email addresses on my Newton appear in both
Claris and the Newton.
