I too just subscribe in non-digest mode and have everything filtered
to a NTLK folder (which currently has 1149 messages in it..) For
digests, I've considered a couple of times writing a Perl script (which
I've never gotten around to) that would split apart a digest, the write
the individual messages (it would have to keep track of threading
itself, since "digested" messages don't have X-Message-Id headers in
them. The you could probably rig an Applescript to open mail, download
everything (sorting the digests into 'NTLK_Digests'), quit it, run the
Perl script (which would put individual messages in 'NTLK_Messages'),
and then re-open Mail. You might not even have to quit mail - I don't
know how well it does if you change it's mbox packages while it's
running.

Or of Mail just had a way to put an Applescript-run button in the
toolbar.
