Has anyone had much experience using SD cards instead of CF cards in the
Newton and Paul's ATA driver?

I've had no trouble with Sandisk CF cards in a generic adapter.

SD cards have become more popular than CF cards nowadays -- there are
nearly twice as many SD cards sold, compared to CF cards. And SD cards
include a controller, just like CF cards. SD cards do also contain some
DRM support whereas CF cards do not. Basically, you pay for getting the
same capacity in a much smaller form factor.
