Text is ASCII, but may be in UTF-8 format or something other than
"standard" Mac ASCII.

With ingenuity :) Ink, and probably free-form graphics as well, is
compressed by a set of rather complicated math routines. Shapes may be
stored similarly (although description of shapes is easier as they are
not freeform). I don't know how styled text is stored.
