It depends. Some extensions need to be on the internal store, but
personally, I only freeze things that I'm not using, especially when my
DRAM (heap space) is running low.

Once again, it depends on the extension. A little experimentation
probably will not hurt. I use my cards mostly for backups.

I suggest you install Frank Gruendel's NewtTest
(http://www.pda-soft.de/newttest.html). It can tell you all sorts of
useful things about your Newton, including how much heap you are using
and if your MP2000 is upgraded or not.
