With a Normal NewtonBook, nope. You can dump convert the book to a
NewtWorks file with a extension, but it does take a while. Then change
the font and either convert it back to a Newtonbook or export to a
desktop and make a Newtonbook that way.

You could also take the text and make a Paperback book which does allow
font changing on the fly, but lacks features such as bookmarking etc.
