They have to be fresh, "squeaky" curds.

Down in Calgary, at the Springhill cheese shop, they bring in squeaky curds on Wednesdays. Just above them is the proper St. Hubert poutine gravy mix. (there is an excellent liquor store a couple of doors down, with many good rums like Pyrat, Zaya, and Ron Zacapa mmmmmmm)

Very civilized.

For your next gastronomic introduction to Soviet Canukistan, you can either find Nanaimo (na-nigh-mo) Bars  or Butter Tarts. One of the better Nanaimo bars that I have had was at Mount Maunganui in NZ, from a displaced Canukistanian.

Recipes could be made available for the more adventurous among us.
