If you are willing to do some leg work, the pre-2100 Newtons and eMates could use an Apple Sylewriter serial cable.
One end was a DIN connector, the other was a 9-pin D connector.
The wiring of these cables was well documented.
Combine this with an appropriate 9-pin to USB adapter and you will have a communications path into a modern Mac or windows box.

If you want to talk to an older Mac, an AppleTalk DIN to DIN cable is all you need. Pinouts were well documented.

"All you need"…right, you can’t just go out to your Apple dealer and buy these things anymore, but DigiKey lists a whole bunch of mini-DIN plugs. Finding one with the proper pin and key pattern would be a thing.
9-pin D connectors are cheap. Wire is cheap. Solder is cheap.

Finding a USB adapter that will talk to your Mac is straight forward. I use FTDI cables at work with my iMacs and MacBooks and they just work. People who just want a turn key solution have used other brands in the past.

No, I’m not offering to build these things. The research time, very small market, and low price demands would put this into that quadrant of low margin and low demand known as "a hobby”. (I’m not looking for another hobby or side hustle.)

In the end, what you’re looking for is an off the shelf Stylewriter serial cable from the mid ‘90s.
