Does it say "Mail"? SimpleMail registers itself as the default mail handler,
so you won't see a routing menu item for SimpleMail, just Mail.
Do you have another mail transport still installed, such as EnRoute IMail?
LunaSuite? Eudora? Is SimpleMail active ie. its icon in Extras does not have
an X drawn through it?
Have you looked at the SimpleMail User's Guide to see if you missed anything
while setting it up?

This is because SimpleMail stores its prefs right alongside your personal
configuration in the system soup, not in a separate slot, IIRC.

The preferences for SimpleMail are accessed through the In/Out box. Open the
In/Out box, then tap i->SimpleMail prefs.
The settings for your mail accounts are stored as an entry in your card in
Owner's Info. Open Owner's Info, choose your card, then Show->All and scroll
down to see if you've got any SimpleMail prefs entries. If not, add one.
I hope I covered most of the major pitfalls, sorry if I came out condescending
but I was trying to cover all of the bases.
