This is a bit tricky, I'd have to let SimpleMail or EnRoute or whatever
email client is used what the correct MIME type is...
But the workaround is easy. vCard and iCalendar files are indeed regular
text files, so you can save the mail body simply into a file ending with
.vcf for vCard and .ics for iCalendar. Those files can be imported into
other applications (as long as they support vCard and iCalendar). Maybe
the line endings have to be converted to carriage return + line feed,
this depends on the email application and the application you want to
import into. Or maybe somebody writes a Mac OS X service that recognizes
vCard/iCalendar text and imports it into iCal or iSync...
