Hang on..
I was born and raised in Quebec.. Poutine exists, but the stuff you =
now see popping up in fast food chains ain't the real thing. Nope, you =
need real Quebec Fries, done in something akin to 30 weight Pennzoil, in =
a frier that was last cleaned somewhere back in the days of Champlain. =
Then you add fresh locally made curds, and top with a nice peppery brown =
gravy, and you have poutine.. That and a "steammee" and you are in true =
Qubecois culinary something or other..
Other Quebecois delicaies include head cheese, creton, blood sausage =
(boudin, how I miss boudin!!), preserver pork drippings, salt pork, REAL =
smoked meat amd of course Labatt 50, and steamee's sigh.. too bad =
politics ruined a province
That and a "steammee" and you are in true Qubecois culinary something or =
other.. (a steammee is a hot dog that along with the bun has been =
setamed to heat it. add choucroute (vinegary rough coleslaw, and go =
right to hot dog paradise)
Creton:
Creton is a delicious traditional delicatessen product that is typically =
found in Quebec. This product resembles a p=E2t=E9 and more particularly =
"p=E2t=E9 campagne", although it has a larger grain. Creton is generally =
made with minced pork, special spices are added and a specific cooking =
procedure is followed. It is usually served as a spread on fresh bread, =
toasted bread or on crackers.=20
Head Cheese:
Head cheese is a traditional culinary preparation which has been =
produced in Qu=E9bec for many years. It is made by cooking a mixture of =
pork head meat and spices for a few hours. This old tradition is =

texture which is a delight to the palate. Head cheese can be compared to =

the market.
