The copy limitation is based on the generation of the .pdf as an attribute.
If it is generated as protected, then it is impossible to capture "text",
but if it is allowed, then copying is easy. So to this point you have been
lucky and haven't run into a protected .pdf.

True. but I think that would be more a problem with processing on a
Newton rather than on a desk/lap/top.

All I've seen will let me copy in Reader 5.1 on the Mac. I just
select View-->continuous then drag to select text and then copy.
