Get one of the many database packages available (Filepad, etc. - hey
knowledgeable folks, what would be good for starters but allows nice
export?) and give it a go!

UNNA has a lot of DB apps, some more can be found at Ebay occasionally
(Leverage - connects to ODBC databases! WinLinx - this supposedly "clones"
Access databases to the Newton and exchanges data with many MS Office
apps... - anybody know more about it?).
