I don't know about the folding part, but the folks at GRiD *did* offer a gas plasma display on their GridCase III model laptop circa 1985:

Anyone who saw one of these displays likely remembers it, as they were a really cool blood red. :) I'm pretty sure it was a GridCase IV that was used to control (at least on-screen) the robot sentries in Aliens (which were only shown in either the European release or in the LD/DVD releases).
