I've recently acquired a 2100, and set up Mail V (connecting with a
wireless card; that was a multi-day adventure)....and it can do POP3.
There's a "Pop Mail" package available from Simon Bell's site:

http://homepage.mac.com/simonbell/mailv/product_info.html

Install it, and follow the instructions on putting "POP!" in the imap
path, and you should be good to go.

(I'm using .mac mail, which is fully imap, so I haven't tried it.)
