As was pointed out by someone else, I believe that almost all email apps
support the 'highlight text to be quoted - hit reply - reply contains only
the highlighted text in quote' feature.

Further, I would urge the entire list to use the convention of two '-'
together on a single line prior to your signature block (as you see below
with mine). This is almost universally recognized by email apps as "don't
include anything below this when quoting a message for a reply".

HOWEVER... There *are* times when the point to be responded to cannot be
captured by simply quoting one or two sentences. For those occasions, it
would be nice to just include a link to the lengthy message and simply state
something like "In response to the comments regarding XYZ, ..." That way,
you achieve a small message size, but folks who maybe come into the middle
of a discussion can still look it up easily. The concept of perhaps putting
the URL for the head of the thread into the message is also interesting.
