The best Mac emulator is Basilisk II. I have it running on an NT box and a
Win98 box with no problems to speak of. The official homepage is:
http://www.uni-mainz.de/~bauec002/B2Main.html and there appears to be a Unix
port (tested under Linux).

You will need a ROM image from a II series Mac (anything up to a Quadra
works), as well as an operating system (you can d/l System 7.5.5 free from
Apple), and you'll need around 250MB free on a hard drive (at least) for the
disk image. The neat thing is, if you grab a ROM from a Quadra you can run
OS8.1.

***Legal disclaimer: In order for this to be legal, you must own the Mac
that you grab the ROM image from, and you can't use the Emu and the Mac at
the same time. I am not responsible for how you choose to acquire the ROM,
or how you decide to use the emulator.***
