After looking in the System soup with Utilities, I've found an entry that was
probably added by SBM Services, containing all email systems. It looks to me
like they are all probably defined in ROM, and Services copy them in a System
entry to probably be able to override them. I don't know how it works, but
maybe if you ask Holger of SBM, he will tell you (he wrote Services and
Utilities).
