Actually,
Apple has an agreement with a third-party company that will provide the
Touch-Screen interface to almost any monitor.
Recently, Apple published a notice the Apple Warranty is still valid if
you have the touch-screen installed on an 'iMac' for instance, so long
as this authorized company is the one performing the upgrade.
Specifically, Apple never had a touch-screen CRT. (or if they did, it
was supported by a secret under-cover super team and the documentation
for this was not with our usual resources!)
Usually what you'll find in the Museums and art-gallery is a Mac SE/30
with a modified CRT or something similar.
It was all out-sourced.
