I also just got one of these and was wondering the same thing - how to turn it into a Newt-like device. That'll have to wait for more free time to be available, but the idea of running Einstein on it is worth looking into.

I haven't heard if there's any touchscreen hardware compatible with
it. As far as video it only comes with composite and HDMI video outs,
so not quite ready to be a handheld out of the box.
