I offered the option of mozzarella cheese to those who could not find a source for cheddar curds. What is often overlooked, is that the curds must be of proper Canadian-sourced cheddar, which can best be found in the area of Montreal-Quebec City, the Lower Fraser Valley, or in downtown Cowichan Bay.
