Surely fresh curds from upper Wisconsin could fill in.
The trouble is, altho a well-intentioned suggestion, mozzarella is absolutely nothing like cheddar curds (IIRC) - tho it melts, it's not much better in flavor than suggesting cottage (“farmer’s”) cheese...
