flammable, and/or there's a fine line between "unconscious" and "dead";
hence the fact that in the real world these gasses are administered by anesthesiologists.

A better choice would be (assuming the plane is high enough) to
depressurize the cabin and have no O2 masks deployed or O2 flowing.
Contrary to "Goldfinger" or "Total Recall" you don't fly around the
cabin and get sucked out the window; nor do your eyes and veins bulge
out of your head. You just faint because the partial pressure of O2 is
too low to exchange for CO2 in your lungs. Apparently the terrorists
knew this possibility, as the planes were commandeered before they
reached maximum cruising altitude.

Of course someone armed could always grab the portable O2 cylinders with
masks stored near the Flight Attendants' stations...
